During a recent dinner at Amici, I had welcome flashes of the original Grotto, long a favorite of mine before it was sold to the Landry Group. The simple, interesting pasta list drew me in, and I loved the night's special of tufoli -- a thinner, broader version of canneloni tubes--that were gratineed in a wide shallow casserole with a stuffing of minced veal and shortribs. Add some refined tomato sauce and numerous hillocks of rich sheep's milk ricotta, and the effect was that of a free-form lasagna that was sublimely light on its feet. It was the perfect dish for a chilly winter night.
